Gluten-Free Beef Stew Recipe for 4 People

This gluten-free beef stew is hearty, flavorful, and perfect for a comforting family meal. Each serving is generously portioned to satisfy even the heartiest of appetites.

Ingredients:

  • 2 pounds beef stew meat, cut into 1-inch cubes

  • 1/4 cup gluten-free all-purpose flour

  • 2 tablespoons olive oil

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 4 cups gluten-free beef broth

  • 2 tablespoons tomato paste

  • 1 teaspoon dried thyme

  • 1/2 teaspoon black pepper

  • 2 bay leaves

  • 4 large carrots, peeled and sliced

  • 3 medium potatoes, peeled and cubed

  • 1 cup frozen peas

  • Salt, to taste

Instructions:

  1. Coat the Beef: Place the beef cubes in a large bowl. Sprinkle with gluten-free flour and toss to coat evenly.

  2. Brown the Beef: Heat olive oil in a large pot over medium-high heat. Add the beef in batches, browning on all sides. Transfer browned beef to a plate.

  3. Sauté Aromatics: In the same pot, add the onion and cook until softened. Add the garlic and cook for another minute.

  4. Deglaze and Add Liquids: Add a little beef broth to deglaze the pot, scraping up any browned bits. Stir in the remaining broth, tomato paste, thyme, black pepper, and bay leaves.

  5. Return Beef to Pot: Add the browned beef back into the pot. Bring to a boil, then reduce heat, cover, and simmer for about 1 hour.

  6. Add Vegetables: Stir in the carrots and potatoes. Continue to simmer, covered, for another 30-40 minutes, or until vegetables and beef are tender.

  7. Final Touches: Add the frozen peas and cook for 5 more minutes. Season with salt to taste. Remove the bay leaves before serving.

  8. Serve: Ladle the stew into bowls, ensuring each serving is about 2 to 2.5 cups. Don't forget your favorite gluten-free bread for dipping.

Tips:

  • Thickening the Stew: If you prefer a thicker stew, you can mix a tablespoon of gluten-free flour with water and add it to the stew, cooking for a few more minutes to thicken.

  • Slow Cooker Option: This recipe can easily be adapted for a slow cooker. After browning the beef and sautéing the onions, transfer everything to a slow cooker and cook on low for 6-8 hours.

  • Storage: Leftover stew can be stored in the refrigerator for up to 3 days and reheats well.

Enjoy this hearty, comforting stew on a chilly day; perfect for warming you up and satisfying your taste buds!
